Quick 20-Minute Beef Stir Fry

Some nights call for a dinner that’s fast, satisfying, and doesn’t require a trip to three different specialty grocery stores. This beef stir fry checks every box — tender strips of beef, crisp colorful vegetables, and a savory, slightly sweet sauce that clings to every bite, all done in about 20 minutes using ingredients you probably already have on hand.

The key to a great stir fry is high heat and quick movement. Everything cooks fast, so having your ingredients prepped and ready before the pan gets hot makes all the difference between a smooth cooking process and a chaotic one.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4

Ingredients

For the Beef and Marinade:

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch

For the Stir Fry Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ cup beef broth
  • 1 teaspoon cornstarch

For the Stir Fry:

  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

Step 1: Marinate the beef
In a bowl, toss the thinly sliced beef with soy sauce and cornstarch. Let it sit for 10 minutes while you prep the vegetables and sauce. This quick marinade helps tenderize the beef and gives the sauce something to cling to later.

Step 2: Mix the stir fry sauce
In a separate small bowl, whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, beef broth, and cornstarch until fully combined. Set aside within reach of the stove.

Step 3: Sear the beef
Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until it’s very hot and just starting to shimmer. Add the beef in a single layer and sear for 1–2 minutes per side until browned but not fully cooked through. Remove the beef from the pan and set aside.

Step 4: Stir fry the vegetables
Add the remaining tablespoon of oil to the same pan. Add the bell pepper, broccoli, and carrot, stirring frequently for 3–4 minutes until the vegetables are crisp-tender but still vibrant in color. Add the garlic and ginger and stir for another 30 seconds until fragrant.

Step 5: Combine and finish
Return the beef to the pan along with any juices. Pour in the stir fry sauce and toss everything together, letting it simmer for 1–2 minutes until the sauce thickens slightly and coats the beef and vegetables evenly.

Step 6: Serve
Remove from heat and garnish with sliced green onions and sesame seeds if using. Serve immediately over steamed rice or noodles.

Tips for the Best Quick Beef Stir Fry

  • Slice the beef thin and against the grain. This is the single biggest factor in getting tender beef instead of chewy strips.
  • Prep everything before you turn on the heat. Stir frying moves fast, so have your sauce mixed and vegetables cut before the pan gets hot.
  • Don’t overcrowd the pan. If your skillet is small, sear the beef in two batches so it browns instead of steaming.
  • High heat is your friend. A properly hot pan gives you that signature seared flavor and prevents the vegetables from turning mushy.
  • Customize the vegetables. Snap peas, mushrooms, or baby corn all work beautifully in this recipe if you want to switch things up.
